Emanuels’s Pea Soup | Uppsala

It was in the beginning of 2020 that I hopped on a train and went to Uppsala to spend the weekend with my oldest friend Emanuel. We have known each other since we were 10 years old, so our friendship is currently 17 years and counting!

Anyhow, when I arrived Emanuel and his girlfriend Olivia took me to a place called Güntherska Hovkonditori & Schweizeri. There they had a specialty, and that was their pea soup. While pricy for simple a bowl of soup, I understood why they could charge so much. Because it was really delicious! So delicious that it took me twice as long to finish as usual. Apparently, Emanuel also liked it so much that he and Olivia came there at least once every two weeks to have some soup. And they weren’t the only ones… Before we got a seat, we had to wait for about 30 minutes, at 11 in the morning! Evidently, the soup is quite popular. So if you don’t want to wait for a seat at Güntherska, you can make it on your own!

Pea Soup

500 g frozen peas
1 yellow onion
7 dl water
2 vegetable bouillon cubes
2 ½ dl cooking cream
½ – 1 teaspoon sambal oelek
1 lime, grated peel and juice

On the Side and Garnish
1 handful of fresh shrimp
1 hard boiled egg, sliced
Crème fraiche
Sourdough bread (Tip! Boudin bread)

How To Do the Soup
4 portions. Peel and chop the onion in small pieces. Boil water and bouillon cubes in a saucepan. Add the frozen peas and onion. Let it cook under a lid for about 5 minutes. Mix the soup in batches. Pour back into the saucepan and add cream, sambal oelek, lime peel and lime juice. Bring to the boil and serve. Serve with a dash of crème fraiche, shrimp, egg and sourdough bread.
